1. The process of composting and fermentation (called pre-fermentation): washing grass (pre-wetting of raw materials) → building stacks → turning.

When building a pile, the height of the stack should be increased in the order of cow straw (or cake) after the first straw. The stack width is 1.6-2 meters, and the height is 1.6-1.8 meters. 2. Into the shed and disinfection (called post-fermentation). After the fermentation, the pre-fermented culture material is transferred into a mushroom house, stacked on a shelf, and heated in a shed with a carbon furnace or steam. The temperature in the shed is raised to 57-60° C. for 1-2 days, maintained for 10 hours, and then decreased. 48-52°C, a process that lasted 3-4 days was called post-fermentation.
